Guacamole

My grandparents live in California.  One of the many reasons I would love to live there again someday is the ability to grow a variety of fruit in your own backyard.  My grandparents have the best of the best in their backyard.  One of the "best" being an avocado tree!  Oh how I would love to have an avocado tree in my backyard!  Seriously.  I could find a way to use avocados for every meal and never get sick of them.  That is how much I love them!

One of my favorite ways to eat an avocado is Guacamole!  MMM!  It is a great topping for most any Mexican meal or just to dip some chips in!  We absolutely LOVE it in my home!



GUACAMOLE
  • 3 medium avocados, halved
  • 1 lime, juiced
  • 1/3 cup onion, minced
  • 1 Tbsp. chopped cilantro
  • 1/4 cup of your favorite salsa, (or diced up tomatoes)
  • kosher salt and fresh pepper
Slice avocados in half and take out the pit. Scrape out the pulp from the avocados in a medium bowl and slightly mash with a fork or a potato masher leaving some large chunks. Add lime juice, salt, pepper, cilantro, salsa/tomato and onion and stir to mix thoroughly.
